CUCUMBERS IN SOUR CREAM DILL SAUCE

Garden veggies are plentiful now.  This is a delicious way to enjoy cucumbers, especially if you like dill.

4 cucumbers

1 cup boiling water

3/4 cup sour cream or creme fraiche

2 Tablespoons cider vinegar

3 Tablespoons minced dill

1 1/2 teaspoon salt

1/3 teaspoon pepper

1 teaspoon sugar

Peel cucumbers.  Slice very thin.  Pour boiling water over them.  Drain immediately and cover with ice water.  Drain again and dry.  Mix sour cream, vinegar, dill, salt, pepper and sugar.  Toss with cucumbers.  Chill for 30 minutes or longer.
