One of our favorites in Myanmar was avocado salad. Every restaurant has its own version. The following was prepared at the cooking school we attended. It’s simple and fast. This serves two, but you can easily adjust to serve more.
1 – 2 avocados
1 tomato
1 tablespoon finely ground peanuts
1 tablespoon peanut oil or substitute
1 teaspoon or to taste, poultry seasoning
Juice of 1/2 squeezed lime
Fried onions or shallots for topping.
Dice avocado. Thinly slice onion. Cut tomato into small bits. Mix and add the other ingredients. In Myanmar, the recipe called for peanut powder. I just ground up some peanuts. Recipe also called for chicken powder. I substituted the poultry seasoning. You can adjust all to your taste. Top with fried onions. I found a bag of these in the supermarket.
