It is melon season, the perfect time to enjoy this light and refreshing summer dessert. It was my contribution to a recent potluck. All loved it. And, it is easy. This recipe serves four.
2 ripe charentais (cantaloupe) melons
2 Tbsp sugar
2 Tbsp water
Zest and juice of one lime
A one-inch piece of ginger
Using a melon baller, scoop out little balls from the melon and place in a serving bowl.
Dissolve sugar in water. Wash lime and remove zest with a zester or fine grater. Squeeze lime and add juice and zest to water mixture. Grate ginger and stir it in. Use less if you prefer less of a bite.
Combine melon with lime-ginger syrup. Chill for at least an hour before serving.
